Sesame seed salmon with ginger greens, yogurt, fruit & almond butter

Ingredients

  • 6 oz (batch of 2) Salmon, skinless, cut into pieces

    or: Chicken breast, Shrimp, Pork chops

  • 4 stalks (batch of 2) Celery, cut into matchsticks

    or: Cucumber, Bell pepper, Vegetable sticks…

  • 2 cups (batch of 2) Cabbage, shredded
  • 1 tbsp (batch of 2) Ginger, minced
  • 1 small piece per serving Fruit (any), any type, any

    or: Apples, Blueberries, Raspberries…

  • 7 oz per serving Greek yogurt, non-fat, plain

    or: Sour cream, Mayonnaise

  • 2 tsp (batch of 2) Olive oil
  • 1 (batch of 2) Green Bell Pepper, sliced
  • 1½ tsp per serving Almond butter
  • 1 tbsp (batch of 2) Soy sauce, low-sodium
  • 2 tbsp (batch of 2) Sesame seeds

Directions

  1. Toss the salmon with soy sauce and sesame seeds. Cook in an oiled skillet 3-4 minutes, turning occasionally, until just cooked through, then set aside. In the same skillet, stir-fry the celery, cabbage, bell pepper, and ginger for about 2 minutes until just tender. Serve the vegetables alongside the salmon, with yogurt topped with fruit and almond butter on the side for dessert. (Makes 2 servings — this entry is one serving.)
