Ingredients

  • 6 oz (batch of 2) Ground turkey, lean

    or: Ground beef

  • 4 cups (batch of 2) Iceberg lettuce, chopped

    or: Romaine, Mixed greens, Spinach…

  • 2 medium (batch of 2) Tomatoes, sliced
  • ½ (batch of 2) Avocado
  • ¼ cup (batch of 2) Parsley, chopped, fresh

    or: Cilantro, Dill

  • ½ cup (batch of 2) Red onion, thinly sliced
  • 1 small piece per serving Fruit (any), any type, any

    or: Apples, Blueberries, Raspberries…

  • 7 oz per serving Greek yogurt, non-fat, plain

    or: Sour cream, Mayonnaise

  • 2 tbsp (batch of 2) White Vinegar
  • 1½ tsp per serving Almond butter
  • 2 tsp (batch of 2) Dijon mustard

Directions

  1. Divide the lettuce, tomato, and avocado between two bowls, drizzle with vinegar, and season with pepper. Mix the turkey, mustard, and parsley, season, and shape into two patties. Cook 8-10 minutes, turning once, until browned through. Sauté the onion in the same pan until golden. Top the salad bowls with a burger and the onion, and serve with yogurt topped with fruit and almond butter on the side. (Makes 2 servings — this entry is one serving.)
